RECIPE: BBQ Prawns with burnt Miso Butter & Saltbush

Throw some prawns on the barbie for this mouth watering recipe from Fresh TV Celebrity Chef Aaron Carr

INGREDIENTS:

  • 4-5 large uncooked prawns

  • 2tbsp red miso paste

  • 1tbsp Rice wine vinegar

  • 1tbsp Tamari

  • 250g block of butter

  • Freshly picked saltbush

INSTRUCTIONS: 

STEP 1:
Heat the butter & miso in a saucepan until the butter turns a nut brown colour.
Remove from the heat, add the saltbush & fry until crispy.

STEP 2: 
Add the rice vinegar & tamari & check the seasoning, adjust if necessary.

STEP 3:
Heat your BBQ until very hot.

STEP 4:
Rub the prawns with a little olive oil & season with sea salt.

STEP 5:
Bbq the prawns shell side down to protect the flesh, when just translucent remove the prawns.

TO SERVE:
Place prawns onto a serving plate, drizzle liberally with the miso butter & saltbush.
