RECIPE: Point Samson Rankin Cod

Generations of Catalano Seafoods, means this man really is the Fish Boss. Josh Catalano is this weeks celebrity chef and he's got all the know how to cook the perfect fail proof Point Samson Cod. 


  • 800g Fresh WA Rankin Cod

  • 300g French Lentils, boiled

  • 3 Roma Tomatoes, cut into chunks

  • 1/2 Red Onion, thickly sliced

  • 1 Garlic Clove, sliced

  • 100ml White Wine

  • Extra Virgin Olive oIl

  • 1 Lemon cut into wedges



Before you start cooking, take the fish out of the fish and allow it to come to room temperature.

Heat a large saucepan to medium high, then add a splash of olive oil and sauté the onions, cooked for TWO minutes.

Add the garlic and tomatoes, then cook till the tomatoes start to soften, approximately TWO minutes.

Add the white wine and cook for another TWO minutes.

Add the Lentils, turn off the heat and mix well with the tomato mix.

To cook the fish, season well with salt, pepper & olive oil, then cook for THREE minutes each side (Rankin Cod is usually a thick fish (approx 3-4cm).

Arrange 4 serving plates and divide the lentil mix evenly in the centre of the plates.

Place the fish on top of the lentils, and serve with a lemon wedge.
